Un sue\u00f1o la inspir\u00f3 a lanzar Tika, la compa\u00f1\u00eda que ahora exporta papas fritas<strong> <\/strong>rojas, moradas y amarillas, elaboradas a partir de papas chilenas y otros vegetales, a Francia y pronto a Espa\u00f1a y Estados Unidos.<\/p>\n<p style=\"text-align: justify;\">Fue en octubre del 2008 que so\u00f1\u00f3 con fabricar papas fritas de colores brillantes. El sue\u00f1o fue tan v\u00edvido que, el mismo d\u00eda siguiente, renunci\u00f3 al cargo de catedr\u00e1tica en escuelas de agronom\u00eda de dos universidades de Santiago y, en el garage de su casa, comenz\u00f3 a experimentar.<\/p>\n<p style=\"text-align: justify;\">Las papas eran la opci\u00f3n obvia. Pero tambi\u00e9n prob\u00f3 un mont\u00f3n de otras verduras -berenjenas y r\u00e1banos entre ellos- antes de decidirse por dos variedades de papas -una roja y otra morada- cultivadas en el sur de Chile cerca de Puerto Montt y en la isla de Chilo\u00e9 adem\u00e1s de tres variedades de camotes y una de betarraga.<\/p>\n<p style=\"text-align: justify;\">Para noviembre del 2009, ya estaba lista y desde entonces no ha parado. No pas\u00f3 mucho tiempo despu\u00e9s de que sus papas fritas aparecieron en tiendas de delicatessen, restaurantes y hoteles de alto nivel en Santiago que recibi\u00f3 una llamada de la cadena de supermercados Jumbo haci\u00e9ndole un pedido -solicitud que rechaz\u00f3 en un principio, preocupada por su capacidad de producci\u00f3n- y poco despu\u00e9s siguieron otros supermercados.&nbsp;<\/p>\n<p style=\"text-align: justify;\">\u201cAhora, estoy en todos lados\u201d, afirma Echenique. De hecho, las papas fritas<strong> <\/strong>Tika est\u00e1n en las estanter\u00edas de 700 puntos de ventas a lo largo del pa\u00eds y no solo en barrios de altos ingresos, si bien su precio es cerca de tres veces el de las papas fritas tradicionales.<\/p>\n<p style=\"text-align: justify;\">Su expansi\u00f3n a un mercado m\u00e1s masivo se vio ayudada el a\u00f1o pasado cuando la empresa decidi\u00f3 reducir sus precios en un 22 por ciento, una disminuci\u00f3n de 1.000 pesos (cerca de US$2) en el paquete m\u00e1s grande de 212 gramos. \u201cQuisimos aprovechar las econom\u00edas de escala que estaban apareciendo a medida que los vol\u00famenes de ventas aumentaban para extender nuestro alcance\u201d, sostiene Echenique.<\/p>\n<p style=\"text-align: justify;\">El momento oportuno parece haber sido parte del secreto del \u00e9xito de las papas fritas<strong> <\/strong>Tika. A medida que la gente se interes\u00f3 m\u00e1s por la alimentaci\u00f3n saludable -lo que en s\u00ed mismo es un signo de la creciente prosperidad de Chile- Tika llen\u00f3 un nicho, que hasta entonces estaba ampliamente vac\u00edo, al proveer un snack natural que es, al mismo tiempo, f\u00e1cil de servir, sabroso y visualmente atractivo.<\/p>\n<p style=\"text-align: justify;\">\u201cLa gente quiere un snack que sea realmente natural, sin colorantes ni qu\u00edmicos\u201d, afirma Echenique. \u201cY, salvo en el caso de dos variedades de papas en que agregamos una peque\u00f1a cantidad de sal baja en sodio, el \u00fanico sodio es el que viene de las verduras\u201d.<\/p>\n<p style=\"text-align: justify;\">A los supermercados tambi\u00e9n les gustan, seg\u00fan Echenique. El margen es atractivo, sostiene -aunque no entra en detalles- y la rotaci\u00f3n de ventas es r\u00e1pida.<\/p>\n<p style=\"text-align: justify;\">Luego siguieron las exportaciones, primero a Uruguay a partir de mediados de 2011 y, debido a que se venden en tiendas duty free, ello tambi\u00e9n abri\u00f3 la puerta al mercado brasile\u00f1o. \u201cNo apuntamos a Uruguay, ellos nos contactaron a trav\u00e9s de nuestro sitio web\u201d, comenta Echenique.<\/p>\n<p style=\"text-align: justify;\">Otro contacto a trav\u00e9s del sitio web sum\u00f3 a Francia en la lista -donde se venden en las tiendas Galeries Lafayette y Le Bon March\u00e9 en Par\u00eds- mientras que, en Espa\u00f1a, est\u00e1n por aparecer en las tiendas de conveniencia de Repsol y, en Estados Unidos, en tiendas duty free y una serie de otras tiendas en California y Florida, gracias a la participaci\u00f3n de Echenique en un tour organizado por ProChile, la agencia de promoci\u00f3n de las exportaciones.<\/p>\n<p style=\"text-align: justify;\"><strong>Perspectivas de Crecimiento<\/strong><\/p>\n<p style=\"text-align: justify;\">Echenique es reacia a entregar cifras de ventas. Sin embargo, se\u00f1ala que en la planta de la compa\u00f1\u00eda en Quilicura, una comuna de la zona norte de Santiago, su fuerza laboral de 35 personas actualmente produce cerca de 20 toneladas de papas fritas al mes o, en otras palabras, el equivalente a unos 95.000 paquetes de 212 gramos que se venden por poco menos de 3.000 pesos en los supermercados de Santiago.<\/p>\n<p style=\"text-align: justify;\">En parte porque no ha he hecho grandes inversiones, la empresa ha sido rentable desde su primer mes, indica. Echenique compr\u00f3 sus primeras m\u00e1quinas en subastas y la inversi\u00f3n inicial fue de apenas US$10.000, parte de lo cual fue un pr\u00e9stamo de su marido -\u201cse pag\u00f3 cada centavo\u201d- y parte reunido por ella misma gracias a la veta de algunas joyas.<\/p>\n<p style=\"text-align: justify;\">Desde entonces, aparte del capital semilla por unos US$65.000 que la compa\u00f1\u00eda recibi\u00f3 de la Corporaci\u00f3n de Fomento de la Producci\u00f3n (CORFO), su crecimiento se ha financiado con flujo de efectivo. Solo en el \u00faltimo tiempo obtuvo su primer cr\u00e9dito bancario a fin de incrementar el capital de trabajo.<\/p>\n<p style=\"text-align: justify;\">Hace 18 meses, se uni\u00f3 a Echenique en la empresa Rodrigo Guti\u00e9rrez, primo de su marido, quien acababa de terminar un MBA en el Babson College en Estados Unidos. Eso ha ayudado, sostiene, al liberarla de la parte financiera y administrativa del negocio.<\/p>\n<p style=\"text-align: justify;\">No obstante, con ventas que se triplicaron el a\u00f1o pasado y ayudada por exportaciones (a\u00fan peque\u00f1as), que se prev\u00e9 se cuadrupliquen este a\u00f1o, Tika est\u00e1 creciendo a una velocidad vertiginosa. El r\u00e1pido crecimiento es complicado, admite Echenique: \u201cAtemorizante y motivador al mismo tiempo\u201d.<\/p>\n<p style=\"text-align: justify;\">Una preocupaci\u00f3n es que la compa\u00f1\u00eda depende de manera crucial de sus suministros de verduras, las que son producidas en su mayor\u00eda por peque\u00f1os agricultores, \u201cque est\u00e1n creciendo con Tika\u201d, comenta Echenique. Pero, aparte de su capacidad para seguir el ritmo de la compa\u00f1\u00eda, est\u00e1n los caprichos del clima y las estaciones.<\/p>\n<p style=\"text-align: justify;\">Fre\u00edr verduras para producir papas fritas no es tan simple. Los cambios en su humedad o contenido de almid\u00f3n pueden hacer una enorme diferencia en el resultado final. \u201cLas papas fritas de la compa\u00f1\u00eda son bastantes diferentes dependiendo de la estaci\u00f3n\u201d, dice Echenique.<\/p>\n<p style=\"text-align: justify;\">Luego, por supuesto, est\u00e1 el riesgo que corre cualquier producto exitoso: ser copiado. Hasta ahora, Tika no tiene ning\u00fan competidor real en Chile, asevera Echenique, y los potenciales rivales \u2013como las papas fritas Terra que comenzaron a importarse desde Estados Unidos poco despu\u00e9s del lanzamiento de Tika- no son tan \u201cnaturales\u201d, afirma. De hecho, han ayudado, indica, al expandir el espacio de supermercado destinado a los snacks naturales donde, antes, \u201cest\u00e1bamos solos frente a los gigantes tradicionales\u201d.<\/p>\n<p style=\"text-align: justify;\">Pero, Tika a\u00fan es vulnerable. Las papas fritas no se pueden patentar -\u201ces como tratar de patentar un hot dog\u201d, sostiene Echenique- y solo uno de sus procesos cuenta con protecci\u00f3n a la propiedad intelectual.<\/p>\n<p style=\"text-align: justify;\">Sin embargo, no se desalienta en lo que describe como su \u201caventura\u201d. Si todo sale seg\u00fan el plan, toda una nueva l\u00ednea de productos Tika, compuesta por siete snacks diferentes, llegar\u00e1 a las estanter\u00edas de los supermercados en agosto. A\u00fan no se entregan detalles, pero se rumorea que la empresa se extender\u00e1 de las verduras a las semillas.<\/p>\n<p style=\"text-align: justify;\"><strong>Ruth Bradley<\/strong> trabaja como periodista freelance en Santiago y es ex editora de bUSiness CHILE.&nbsp;<\/p>\n<p style=\"text-align: justify;\">&nbsp;<\/p>\n<p><!--:--><!--:en--><\/p>\n<p style=\"text-align: justify;\">All entrepreneurs, of course, have a dream but, for 37-year-old Carolina Echenique, it is literally true. A dream inspired her to launch Tika, the company that now exports red, purple and yellow chips, made from native Chilean potatoes and other vegetables, to France and, soon, Spain and the United States.<\/p>\n<p style=\"text-align: justify;\">It was in October 2008 that she dreamt of making brightly-colored chips. So vivid was the dream that, the very next day, she resigned as a lecturer at the agronomy schools of two Santiago universities and, in the garage of her house, started experimenting.<\/p>\n<p style=\"text-align: justify;\">Potatoes were the obvious choice. But she also tried lots of other vegetables &#8211; eggplants and radishes among them &#8211; before settling on two varieties of potato &#8211; one red and the other purple &#8211; grown in southern Chile around Puerto Montt and on the island of Chilo\u00e9 as well as three varieties of sweet potato and one of beetroot.<\/p>\n<p style=\"text-align: justify;\">By November 2009, she was ready to go and hasn\u2019t stopped since. It wasn\u2019t long after the chips appeared in delicatessens, up-market restaurants and hotels in Santiago that she got a call from the Jumbo supermarket chain asking to place an order &#8211; a request that, worried about her production capacity, she initially turned down &#8211; and other supermarkets soon followed.&nbsp;<\/p>\n<p style=\"text-align: justify;\">\u201cNow, I\u2019m everywhere,\u201d says Echenique. Tika chips are, indeed, on the shelves of 700 points of sale along the length of the country and, although around three times the price of traditional chips, not only in high-income neighborhoods.<\/p>\n<p style=\"text-align: justify;\">Their expansion to a more mass market was helped last year when the company decided to cut its prices by 22 percent &#8211; a drop of 1,000 pesos (around US$2) on the largest 212-gram bag. \u201cWe wanted to take advantage of the scale economies that were appearing as sales volume increased to extend our reach,\u201d says Echenique.<\/p>\n<p style=\"text-align: justify;\">Timing appears to have been part of the secret of the success of Tika chips. As people became more interested in healthy eating &#8211; itself a sign of Chile\u2019s growing prosperity &#8211; Tika filled a niche, until then largely empty, by providing a natural snack that is, at the same time, easy to serve, tasty and visually attractive.<\/p>\n<p style=\"text-align: justify;\">\u201cPeople want a snack that\u2019s really natural, without colorants and chemicals,\u201d says Echenique. \u201cAnd, except in the case of the two potato varieties where we add a tiny bit of low-sodium salt, the only sodium is what comes from the vegetables.\u201d<\/p>\n<p style=\"text-align: justify;\">Supermarkets like them too, according to Echenique. The margin is attractive, she says &#8211; although unwilling to go into details &#8211; and the turnover fast.<\/p>\n<p style=\"text-align: justify;\">Exports have followed, first to Uruguay starting in mid-2011, and, because they are sold there in duty-free shops, that also opened the door to the Brazilian market. \u201cWe didn\u2019t target Uruguay, they contacted us through our website,\u201d reports Echenique.<\/p>\n<p style=\"text-align: justify;\">Another contact through the website added France to the list &#8211; where they are sold in the Galeries Lafayette and Le Bon March\u00e9 stores in Paris &#8211; while, in Spain, they are poised to appear in the Repsol convenience stores and, in the United States, in duty-free shops and a number of other outlets in California and Florida, thanks to Echenique\u2019s participation in a tour organized by the ProChile export promotion agency.<\/p>\n<p style=\"text-align: justify;\"><strong>Growth prospects<\/strong><\/p>\n<p style=\"text-align: justify;\">Echenique is loath to give sales figures. She says, however, that, at the company\u2019s plant in Quilicura, a suburb of northern Santiago, its 35-strong workforce currently turns out some 20 tonnes of chips a month or, in other words, the equivalent of around 95,000 of the 212-gram bags that sell for just under 3,000 pesos in Santiago supermarkets.<\/p>\n<p style=\"text-align: justify;\">Partly because it has been light on investment, the company has been profitable from its first month, she says. She bought its first machines in auctions and the initial investment was just US$10,000, partly a loan from her husband &#8211; \u201cevery cent paid back\u201d &#8211; and partly raised by Echenique herself by selling some jewelry.<\/p>\n<p style=\"text-align: justify;\">Since then, apart from seed capital of some US$65,000 which the company received from the government\u2019s Economic Development Agency (CORFO), its growth has been financed out of cash flow. Only recently has it taken out its first bank loan in order to increase working capital.<\/p>\n<p style=\"text-align: justify;\">Eighteen months ago, Echenique was joined in the company by Rodrigo Guti\u00e9rrez, a cousin of her husband, who had just finished an MBA at Babson College in the United States. That has helped, she says, by freeing her from the financial and administrative part of the business.<\/p>\n<p style=\"text-align: justify;\">But, with sales tripling last year and, helped by (still small) exports, projected to increase four-fold this year, Tika is growing at a dizzying speed. Fast growth is complicated, admits Echenique &#8211; \u201cfrightening and motivating at the same time\u201d.<\/p>\n<p style=\"text-align: justify;\">One concern is that the company depends crucially on its supply of vegetables, produced mostly by small farmers &#8211; \u201cwho are growing with Tika,\u201d says Echenique. But, apart from their capacity to keep pace with the company, there are the vagaries of the weather and the seasons.<\/p>\n<p style=\"text-align: justify;\">Frying vegetables to produce chips isn\u2019t that straightforward. Changes in their humidity or starch content can make an enormous difference to the final result. \u201cAny company\u2019s chips are quite different depending on the season,\u201d says Echenique.<\/p>\n<p style=\"text-align: justify;\">Then, of course, there\u2019s the risk run by any successful product &#8211; being copied. So far, Tika doesn\u2019t have any real competitors in Chile, says Echenique, and potential rivals &#8211; like the Terra chips that began to be imported from the United States soon after Tika\u2019s launch &#8211; aren\u2019t as \u201cnatural\u201d, she argues. They have, in fact, helped, she says, by expanding the supermarket space allotted to natural snacks where, before, \u201cwe were alone against the traditional giants\u201d.<\/p>\n<p style=\"text-align: justify;\">But Tika is still vulnerable. Chips can\u2019t be patented &#8211; \u201cit\u2019s like trying to patent a hot dog,\u201d says Echenique &#8211; and only one of its processes has intellectual property protection. &nbsp; &nbsp; &nbsp;&nbsp;<\/p>\n<p style=\"text-align: justify;\">She is not, however, deterred from what she describes as her \u201cadventure\u201d. If all goes according to plan, a whole new line of Tika products, comprising seven different snacks, will hit the supermarket shelves in August.
