{"id":3521,"date":"2005-06-01T01:00:00","date_gmt":"2005-06-01T04:00:00","guid":{"rendered":""},"modified":"2015-02-02T09:00:43","modified_gmt":"2015-02-02T12:00:43","slug":"abriendo-espacios-en-el-mercado-norteamericano-de-choritos","status":"publish","type":"news","link":"https:\/\/amchamchile.cl\/en\/noticia\/abriendo-espacios-en-el-mercado-norteamericano-de-choritos\/","title":{"rendered":"<!--:es-->Abriendo Espacios en el Mercado Norteamericano de Choritos<!--:--><!--:en-->Muscling in on the U.S. Mussel Market<!--:-->"},"content":{"rendered":"<p><!--:es--><br \/>\n<!--break--><br \/>\n<B><I>Imprimiendo un nuevo giro sobre un producto que se exporta habitualmente en forma congelada, una compa\u00f1\u00eda chilena reci\u00e9n establecida ha efectuado la primera exportaci\u00f3n de choritos pasteurizados a los EE.UU.<\/B><\/I><\/p>\n<p>En Marzo de 2004, Arturo Fahrenkrog visit\u00f3 la Exhibici\u00f3n Internacional de Productos del Mar que se celebra anualmente en Boston, Massachussets. Y el joven empresario chileno -recientemente graduado de Universidad del Mar, en Valpara\u00edso- vio que exist\u00eda una oportunidad que aprovechar en el \u00e1rea de productos del mar pasteurizados.<\/p>\n<p>Fahrenkrog no era un novato en materia de productos del mar. Mientras estaba en la universidad, \u00e9l fue uno de los ganadores de Savia Nueva, una competencia anual organizada por Shell Chile para promocionar el inter\u00e9s empresarial entre la gente joven y, con el apoyo de Shell, comenz\u00f3 su primer negocio, distribuyendo platos de pescado en porciones individuales para hospitales y cl\u00ednicas, en Valpara\u00edso.<\/p>\n<p>En Boston, el observ\u00f3 c\u00f3mo el mercado de EE.UU. consume importantes cantidades de cangrejo pasteurizado, proveniente de Asia y se le ocurri\u00f3 que en Chile exist\u00eda un suministro anual de choritos de alta calidad y relativamente baratos. \u201cMe di cuenta de que no ser\u00eda f\u00e1cil\u201d, expresa \u00e9l, \u201cpero yo estimaba que Chile ten\u00eda un gran potencial dentro de este mercado\u201d.<\/p>\n<p>Durante largos a\u00f1os, Nueva Zelanda ha dominado la industria de choritos en todo el mundo, pero los niveles de producci\u00f3n han ido subiendo en Chile. La producci\u00f3n mundial est\u00e1 creciendo alrededor de un 3% al a\u00f1o, pero a partir de 1999, los cultivadores chilenos han doblado sus producciones a 30.000 toneladas anuales.<\/p>\n<p>M\u00e1s a\u00fan, Chile tiene el clima apropiado, aguas no contaminadas y bajos costos de producci\u00f3n. El precio en Chile para una libra de choritos sin conchas, es de alrededor de USD 2.50, en comparaci\u00f3n a los USD 2.80 por libra, incluyendo conchas, de Nueva Zelanda.<\/p>\n<p>Y el chorito chileno, dice Fahrenkrog, \u201ces suave, tiene una buena textura, un buen color y un tama\u00f1o premium perfecto\u201d. Ya est\u00e1 siendo exportado pero principalmente en forma de congelado.<\/p>\n<p>\u201cNueva Zelanda y China son nuestros dos principales rivales\u201d, manifiesta \u00e9l. \u201cPero Nueva Zelanda es caro y China tiene problemas con las regulaciones sanitarias; Chile es un pa\u00eds muy competitivo\u201d, agrega \u00e9l. Y el Tratado de Libre Comercio de Chile con EE.UU., que entr\u00f3 en vigencia a inicios del a\u00f1o pasado, ha complementado dicha competitividad, al fomentar el conocimiento sobre los productos chilenos, manifiesta \u00e9l.<\/p>\n<p>Una vez de vuelta en Chile, Fahrenkrog se reuni\u00f3 con los cultivadores de choritos del \u00e1rea cercana a Puerto Montt, en el sur de Chile y con ellos form\u00f3 una alianza; posteriormente regres\u00f3 a Boston para comprar la maquinaria de pasteurizaci\u00f3n. Todo lo que le faltaba era un distribuidor estadounidense.<\/p>\n<p>Ese problema fue resuelto tres meses despu\u00e9s, cuando Fahrenkrog viaj\u00f3 a Miami como parte de una misi\u00f3n comercial organizada por AmCham, la Sociedad de Fomento Fabril (SOFOFA) y la C\u00e1mara de Comercio de Santiago (CCS). En esa ocasi\u00f3n, conoci\u00f3 a Eva Berman de E&#038;R Internacional Seafood, Inc., la compa\u00f1\u00eda que actualmente distribuye sus productos en el mercado norteamericano.<\/p>\n<p>\u201cSi no hubiera viajado con la misi\u00f3n de AmCham, yo no tendr\u00eda un solo cliente en los Estados Unidos\u201d, dice Fahrenkrog. \u201cYo pod\u00eda haber tenido un producto certificado espectacular, pero eso no lo conduce a uno a ninguna parte si no se tiene una carpa de circo o a alguien que venda los boletos\u201d, agrega.<\/p>\n<p><B><font color=\"#990000\">El primer embarque<\/B><\/font><\/p>\n<p>Hasta este momento, Fahrenkrog de 26 a\u00f1os de edad, ha invertido USD 20.000 de sus ahorros en su compa\u00f1\u00eda, Seafood Chile, con sede en Vi\u00f1a del Mar. Esta es la \u00fanica productora del pa\u00eds de productos del mar pasteurizados, expresa \u00e9l.<\/p>\n<p>\u201cFui muy arriesgado en t\u00e9rminos de inversi\u00f3n, tanto en lo relativo a oportunidad como en lo que se refiere a la parte financiera\u201d, afirma \u00e9l. Pero Fahrenkrog tambi\u00e9n tiene costos reducidos al operar a Seafood Chile desde las oficinas de Geomediciones, una firma de ingenier\u00eda, de propiedad de su padre, en la que tambi\u00e9n trabajan su hermano y su esposa Catalina.<\/p>\n<p>Despu\u00e9s de encontrar al distribuidor, Seafood Chile necesit\u00f3 la aprobaci\u00f3n del U.S. Food and Drug Administration (FDA) (Administraci\u00f3n de Drogas y Alimentos de los Estados Unidos), as\u00ed como la certificaci\u00f3n de An\u00e1lisis de Peligros y Puntos Cr\u00edticos de Control (Hazard Analysis and Critical Control Point) (HACCP), el m\u00e9todo utilizado en la industria alimenticia de EE.UU. para identificar y eliminar potenciales riesgos de seguridad. Fue este tr\u00e1mite, el que prob\u00f3 a Fahrenkrog hasta su l\u00edmite.<\/p>\n<p>El hecho que Seafood Chile sea la primera compa\u00f1\u00eda en el pa\u00eds que produce choritos pasteurizados, hace que el proceso sea un gran desaf\u00edo. \u201cHubo momentos en los que estuve verdaderamente desesperado\u201d, se recuerda. \u201cEllo representaba invertir, invertir e invertir y pagar por la certificaci\u00f3n y pagar a los laboratorios y volver a realizar pruebas una y otra vez; yo sab\u00eda qu\u00e9 cosas estaban involucradas, pero jam\u00e1s pens\u00e9 que ello ser\u00eda tan dif\u00edcil\u201d, recuerda \u00e9l. <\/p>\n<p>Pero \u00bfde d\u00f3nde surgi\u00f3 este esp\u00edritu de perseverancia?  Quiz\u00e1s es la sangre de inmigrante de los abuelos de Fahrenkrog que llegaron a Chile provenientes de Alemania, buscando una vida mejor.  \u201cYo miro el ejemplo de mi padre y veo que nada se logra en dos a\u00f1os\u201d, explica \u00e9l. \u201cEllo puede tomar hasta veinte a\u00f1os\u201d.<\/p>\n<p>Su inter\u00e9s en los alimentos proviene de sus abuelos que trabajaban como hoteleros. Y habiendo sido siempre un apasionado de la pesca con mosca, su incursi\u00f3n hacia una industria basada en pescado, parec\u00eda lo m\u00e1s natural. Uno de sus otros negocios, es un refugio para pesca con mosca en Chilo\u00e9.<\/p>\n<p>Finalmente, el 15 de Abril, el primer embarque de choritos pasteurizados de Seafood Chile, empacado en 500 frascos, vol\u00f3 rumbo a Miami, lugar donde se vender\u00e1n al detalle aproximadamente entre USD 7 o USD 8 por frasco de una libra. Pero el plan de Fahrenkrog a mediano plazo es el de exportar sobre mil frascos a la semana a EE.UU.  <\/p>\n<p>Los choritos en s\u00ed ser\u00e1n vendidos en conjunto con una ambiciosa gama de sabores, tas como lim\u00f3n y ajo, barbacoa, teriyaki (plato japon\u00e9s de pescado, azonado con salsa de soya), Cajun, dill (eneldo), curry y una mezcla de choritos con almejas,que el mismo Fahrenkrog ha dise\u00f1ado. Tambi\u00e9n hay otros productos que pronto ser\u00e1n lanzados, tales como los ostiones y una mezcla de paella que incluye pescado, choritos, almejas y ostiones.<\/p>\n<p>\u201cCuando uno ejecuta algo y eres pionero, es muy importante perseverar. En los momentos dif\u00edciles, tienes que recordar que la vida no te regala nada\u201d, concluye el joven empresario.<!--:--><!--:en--><br \/>\n<!--break--><br \/>\n<B><I>Putting a new spin on a product currently exported mostly in frozen form, a Chilean start-up company has just made the country\u2019s first export of pasteurized mussels to the U.S.<\/B><\/I><\/p>\n<p>In March 2004, Arturo Fahrenkrog visited the International Seafood Show held annually in Boston, Massachusetts. And the young Chilean entrepreneur, not long graduated from the Universidad del Mar in Valpara\u00edso, saw an opportunity in pasteurized seafood. <\/p>\n<p>Fahrenkrog was not new to seafood. While still at university, he was one of the winners of Savia Nueva, an annual competition organized by Shell Chile to promote entrepreneurship among young people and, with Shell&#8217;s support, started his first business, distributing individually-portioned fish dishes to hospitals and clinics in the Valpara\u00edso area. <\/p>\n<p>In Boston, he saw how the U.S. market consumes important quantities of pasteurized crab from Asia and it occurred to him that, in Chile, there was a year-round supply of relatively cheap, high-quality mussels. &#8220;I realized it would not be easy,&#8221; he says, &#8220;but I believed that Chile had a big potential in this market.&#8221;<\/p>\n<p>For a long time, New Zealand has dominated the world\u2019s mussel industry, but production levels have been climbing in Chile. Worldwide output is rising at about 3% a year but, since 1999, Chilean farmers have doubled their production to 30,000 tonnes annually. <\/p>\n<p>Moreover, Chile has the right climate, unpolluted waters, and low production costs. The price in Chile for a pound of mussels, without shells, is around US$ 2.50, as compared to US$2.80 a pound, including shells, in New Zealand. <\/p>\n<p>And the Chilean mussel, says Fahrenkrog, &#8220;is sweet and has a good texture, a nice color and a perfect premium size&#8221;. It is already exported, but mostly in frozen form.<\/p>\n<p>&#8220;New Zealand and China are our two main rivals,&#8221; he explains. &#8220;But New Zealand is expensive and China has trouble with sanitary regulations; Chile is a very competitive country,&#8221; he adds. And Chile\u2019s free trade agreement with the United States, which came into force at the beginning of last year, has complemented that competitiveness by heightening awareness of Chilean products, he says.  <\/p>\n<p>Back in Chile, Fahrenkrog met with mussel farmers from the area around Puerto Montt in southern Chile, with whom he has formed an alliance, and then he returned to Boston to buy the pasteurizing machinery. All he lacked was a U.S. distributor.<\/p>\n<p>That problem was solved just three months later when Fahrenkrog traveled to Miami as part of a trade mission organized by AmCham, Chile\u2019s Manufacturers\u2019 Association (SOFOFA) and the Santiago Chamber of Commerce (CCS). There, he met Eva Berman of E&#038;R International Seafood, Inc., the company that now distributes his products in the U.S. market. <\/p>\n<p>&#8220;If I had not gone on the AmCham mission, I wouldn\u2019t have a client in the United States,\u201d says Fahrenkrog. &#8220;I could have a spectacular certified product, but that gets you nowhere if you don\u2019t have a circus tent or anyone to sell the tickets,&#8221; he notes.<\/p>\n<p><B><font color=\"#990000\">First shipment<\/B><\/font><\/p>\n<p>So far, 26-year-old Fahrenkrog has invested US$20,000 of his savings in his company, Seafood Chile, based in Vi\u00f1a del Mar. It is, he says, the country\u2019s only producer of pasteurized seafood products. <\/p>\n<p>&#8220;I was very daring in terms of investment, both as regards timing and financially,\u201d he says. But Fahrenkrog has also contained costs by operating Seafood Chile out of the offices of Geomediciones, an engineering firm owned by his father and in which his brother and wife, Catalina, both work. <\/p>\n<p>After finding a distributor, Seafood Chile needed approval from the U.S. Food and Drug Administration (FDA) as well as Hazard Analysis and Critical Control Point (HACCP) certification, the method used in the U.S. food industry to identify and eliminate potential safety risks. It was this paperwork that tested Fahrenkrog to the limits.<\/p>\n<p>The fact that Seafood Chile is the first company in Chile to produce pasteurized mussels made the process especially challenging. &#8220;There were moments when I was truly desperate,&#8221; he recalls. &#8220;It was invest and invest and invest, and pay for certification and pay for the laboratories, and do the tests again and again; I did know what was involved, but I never thought that it would be so difficult,&#8221; he recalls.<\/p>\n<p>So where did this spirit of perseverance come from? Perhaps it is the immigrant blood from Fahrenkrog&#8217;s paternal grandparents who came to Chile from Germany looking for a better life. &#8220;I look at my father&#8217;s example and I see that nothing is achieved in two years,&#8221; he explains. &#8220;It takes twenty.\u201d  <\/p>\n<p>>From his grandparents, who worked as hoteliers, came his interest in food. And, always a passionate fly fisherman, his foray into an industry based on fish seemed natural. One of his other business ventures is a fly fishing lodge in Chilo\u00e9. <\/p>\n<p>At last, on April 15, Seafood Chile\u2019s first 500 jars of pasteurized mussels were flown into Miami, where they will retail at around US$7 or US$8 per pound jar. But Fahrenkrog\u2019s medium-term plan is to export over a thousand jars a week to the United States. <\/p>\n<p>Plain mussels will be sold alongside an ambitious range of flavorings &#8211; lemon and garlic, barbeque, teriyaki, Cajun, dill, curry, and a mussel and clam mix &#8211; that Fahrenkrog himself has devised. Soon to be launched are scallops and a paella mix that includes fish as well as mussels, clams and scallops. <\/p>\n<p>&#8220;When you do something and you are a pioneer, it is very important to persevere.
